In an effort to start 2010 in a healthy way I've committed to cooking vegetable heavy meals and exercising every night. Last night's dinner was pretty good - I made whole wheat fettuccine, broiled salmon, and a puttanesca sauce. For the sauce I melted anchovies with garlic in about 2 tbs of olive oil, added a big can of organic tomatoes, rinsed capers & Kalamata olives, and then added lots of onions at the end (C hates onions so I left them out of his portion). This made a ton of sauce so I can freeze it to use later.
